Sweet potatoes are nutrition dense and delicious. This recipe is a healthier side-dish swap for traditional mashed potatoes.

- 2 lbs sweet potato
- 1/2 cup milk unsweetened, non-dairy
- 3 tbsp coconut oil or non-dairy butter
- dash salt & pepper to taste
- 1 tsp cinnamon (optional)

Instructions
- Preheat the oven to 400 degrees.
- Make small cuts on the top of the sweet potato, place on a baking sheet and put in the oven until all the sweet potatoes are tender (about 45 minutes). Set aside until cool.
- When the sweet potatoes are cooler, scoop the flesh out the skin and put in a bowl.
- Add the non-dairy milk, coconut oil, salt, and cinnamon.
- Mash with a fork or potato masher until the right consistency.
