Make small cuts on the top of the sweet potato, place on a baking sheet and put in the oven until all the sweet potatoes are tender (about 45 minutes). Set aside until cool.
When the sweet potatoes are cooler, scoop the flesh out the skin and put in a bowl.
Add the non-dairy milk, coconut oil, salt, and cinnamon.
Mash with a fork or potato masher until the right consistency.
