- 12 carrot
- 3 tbsp olive oil
- salt & pepper to taste
- a pinch parsley fresh, optional

Instructions
- Preheat the oven to 400°.
- Use a knife to cut out the stem off the carrot and slice the carrot horizontally.
- Cook carrots for about 20 minutes or until mostly tender.
- Allow them to cool for a bit before cutting into coins.
- Toss them in a bowl with the oil, salt, and pepper.
- Spread them across the baking sheet and roast them until slightly browned and the desired tenderness
