  1. Preheat the oven to 400°.
  2. Use a knife to cut out the stem off the carrot and slice the carrot horizontally.
  3. Cook carrots for about 20 minutes or until mostly tender.
  4. Allow them to cool for a bit before cutting into coins.
  5. Toss them in a bowl with the oil, salt, and pepper.
  6. Spread them across the baking sheet and roast them until slightly browned and the desired tenderness
